To answer your question, when shooting photos of the greys I use a Canon PowerShot SD1000. Yup, a point and shoot. It fits in my pocket and I don’t have to worry if/when it gets damaged from dust, dirt, mud, greyhound slobber, etc. I time my swing of the camera with the speed of the dog. I’ve been practicing every weekend (and then some) for years to get my timing down. It helps that it is the same group of dogs so I know their behaviors pretty well and can anticipate (a little) what they are going to do.
